It is important to minimize the intake of cholesterol (animal fat) and trans fats (margarines and commercial cooking oils) while consuming enough good fats. Good fats raise your HDL (High Density Lipoprotein) or “good cholesterol”. This HDL clears the blood vessel walls of excess “bad cholesterol” (Low Density Lipoprotein also known as LDL) which may otherwise form into plaques causing coronary artery disease.
